Tomato & Onion Tartlets: Look good while barely trying

If you aren’t exactly the best cook but need to make a dish to impress in a pinch, this is the recipe for you. I put this together with almost no effort the other day and it was such a beautiful presentation.

Trust me, it looks like you spent a ton of time and effort but really only requires 5 main ingredients and about 25 minutes of your time. Did I mention it was also delicious? Recipe and photos after the jump.

Tomato & Onion Tartlet
Serves 2 as a main dish or 4-6 as an appetizer

  • 1 sheet of puff pastry
  • 1 large red onion thinly sliced
  • 2 vine ripened tomatoes sliced
  • 1 bunch of basil sliced into ribbons
  • 6 oz of feta cheese
  • Balsamic vinegar
  • Sea salt

Directions:

  1. Pre-heat the oven to 400
  2. Defrost the puff pastry and cut in half to form two rectangles
  3. Take a sharp knife and score another rectangle inside the border of the puff pastry. Try not to cut all the way through
  4. Place the two rectangles on a baking sheet. Make sure to use parchament paper so it doesn’t stick.
  5. Bake the pastry until it begins to puff up and create a “crust” border where you scored it
  6. While the pastry is baking sautee the onions on LOW heat in several tablespoons of olive oil. NOTE: This should take about 15 mins. You want to continue to cook them until they become slightly sweet and very soft. Just prior to finishing the onions add a splash or two of balsamic vinegar
  7. Remove the pastry from the oven and add the onions, basil and feta inside the border
  8. Top with a layer of tomatoes and sea salt to taste
  9. Return to the over for another 15 minutes or until the pastry is golden and flakey

Serve immediately. Pairs nicely with steamed Swiss Chard.
