It’s Hanukkah time and I was very excited to be invited to a latke party at my friend Rebecca’s house. She made three different types of latkes: potato, sweet potato, and ones with Indian flavors and spices. As soon as I heard that there was going to be a gathering of people expecting traditional Jewish foods, I felt it necessary to offer to bring the Golden family noodle kugel. Ours is a sweet version with cinnamon, sugar, and topped with cornflake crumbs, and I only eat it about twice a year on Rosh Hashanah and Hanukkah, so it is quite a treat! Below is the recipe which I have altered a bit in order to make it healthier:
Golden Family Noodle Kugel
Ingredients:
- 1 package of wide egg noodles
- 1/2 cup of butter
- 1/2 cup of skim milk
- 1/2 cup of sugar
- 16 oz container of low fat cottage cheese
- 16 oz container of 0% fat greek yogurt
- 2 eggs
- 1 tbsp of vanilla
- 1/4 cup of granulated sugar
- 1/4 cup of Kellogg’s cornflake crumbs (crushed)
- cinnamon to taste
Directions:
- Preheat oven to 450 degrees.
- Cook egg noodles.
- Combine egg noodles with butter.
- Mix all other ingredients except granulated sugar and cornflake crumbs in large bowl.
- Spray pam on bottom of 9×13 inch rectangular pan.
- Combine noodles with all other ingredients and dump into pan.
- In large Ziploc bag combine cornflake crumbs, granulted sugar, and 2 tbsp of butter to create topping.
- Sprinkle topping over the noodle kugel and bake for 35-40 minutes.
