Homemade Vegetable Broth

I’ve been fighting a cold for about a week now and was desperate for some homemade soup. After dragging myself out of bed I realized I had all the ingredients except for broth. Considering my current state there was no way I was heading out to the grocery store to pick some up. Little did I know, making vegetable stock is ridiculously easy and not to mention way tastier. So, grab a giant pot and start tossing stuff (skins and all) in!

Homemade Vegetable Broth

    • 1 gallon of water
    • Kosher salt and pepper
    • Onions whole or cut in half
    • Carrots
    • Tomatoes cut in half
    • Spinach
    • Zucchini
    • Bay leaves (3-4)
    • Basil, oregano or any other dried (or fresh) herbs you might have

      Simmer the water and vegetables for about 40 minutes then strain the liquid. Use the broth immediately or freeze for later use.
